Ingredients
  

Beans and Lentils

  • 1 package 15-bean mix (about 16 oz)
  • 1 cup lentils

Vegetables

  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped

Sausage and Seasonings

  • 1 lb smoked sausage, sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon thyme

Broth

  • 6 cups broth (vegetable or chicken)

Preparation

  • Soak the 15-bean mix overnight by covering with water. The next day, drain and rinse the beans.

Sautéing the Vegetables

  • In a large pot, heat a drizzle of olive oil over medium heat. Sauté the chopped onions, celery, and carrots for about 5-7 minutes until tender and fragrant.

Adding the Sausage

  • Add the sliced smoked sausage to the pot and cook for another 5 minutes until the sausage is browned.

Joining the Beans and Lentils

  • Stir in the prepared 15-bean mix and lentils.

Pouring in the Broth

  • Pour in the broth and stir everything together, bringing it to a gentle boil.

Seasoning the Soup

  • Sprinkle in the smoked paprika, chili powder, and thyme. Adjust seasonings to taste.

Simmering

  • Reduce the heat to low, cover the pot, and let it simmer for about 1 to 1.5 hours, stirring occasionally.

Checking the Beans

  • After an hour, taste the beans to check for tenderness. If they’re not soft, let them simmer longer.

Final Touches

  • Before serving, taste again for seasoning adjustments with salt and pepper.

Serving the Soup

  • Ladle the soup into bowls and optionally top with fresh herbs or a dollop of sour cream.

Notes

For a heartier soup, consider adding potatoes or corn. Using bone-in sausage enhances the flavor. Store leftovers in an airtight container for up to 4 days.
