Pasta and Vegetables

  • 12 ounces Pasta (your choice) Use your favorite type of pasta.
  • 4 cups Fresh spinach Can be substituted with kale or frozen peas.
  • 8 ounces Sliced mushrooms
  • 1 each Onion (chopped)
  • 3 cloves Garlic (minced)

Main Ingredients

  • 1 pound Italian sausage Remove casings and crumble before cooking.
  • 24 ounces Marinara sauce
  • 2 tablespoons Olive oil

Seasonings

  • to taste Salt
  • to taste Pepper

Cooking Setup

  • Start by bringing salted water to a rolling boil in a large pot for the pasta.
  • In a large skillet, heat olive oil over medium heat.

Cooking Steps

  • Sauté the chopped onion and minced garlic in the skillet until the onion becomes translucent, about 3-5 minutes.
  • Add the sliced mushrooms and cook until they soften and begin to brown.
  • Crumble the Italian sausage into the skillet and cook until browned, about 5-7 minutes.
  • Fold in the fresh spinach and allow it to wilt.
  • Stir in the marinara sauce and let it simmer for about 5 minutes.
  • Drain the cooked pasta and add it to the skillet, tossing to combine with the sauce.
  • Season with salt and pepper to taste and serve.

Notes

Don't overcook the pasta; aim for al dente. Fresh herbs like basil can enhance flavor.
