Ingredients
  

Filling

  • 2 cups Apples (peeled and diced) A mix of Granny Smith and Honeycrisp gives a balanced flavor.
  • 1/2 cup Sugar
  • 1 tsp Cinnamon
  • 1 tbsp Lemon juice

Pastry

  • 1 package Pre-made pie crusts (or homemade)
  • 1 Egg (for egg wash)
  • 1 tbsp Milk (for egg wash)
  • 1 tbsp Butter (for brushing) Melted
  • to taste Optional: Cinnamon sugar for sprinkling

Instructions
 

Preparation

  • Start by washing and peeling your apples. Dice them into small pieces.
  • In a medium-sized bowl, combine the diced apples, sugar, cinnamon, and lemon juice. Stir until the apples are well coated.
  • Roll out the pie crusts on a floured surface and cut the dough into circles about 4-5 inches in diameter.

Assembly

  • Place a spoonful of the apple mixture onto one half of each dough circle. Fold the dough over and crimp the edges with a fork.

Cooking

  • Preheat your air fryer to 350°F (175°C).
  • Whisk the egg and milk together and brush this mixture over the tops of each pie. Sprinkle with cinnamon sugar if desired.
  • Place the hand pies in the air fryer basket in a single layer and air fry for about 10-12 minutes.
  • Remove them from the air fryer and brush with melted butter.
  • Allow the hand pies to cool slightly before serving.

Notes

For added flavor, consider adding a teaspoon of vanilla extract to the apple filling or chopped nuts for texture. You can freeze the assembled pies before air frying for convenience.
