Main Ingredients

  • 1 head cauliflower, riced Make sure to rice the cauliflower thoroughly and squeeze out excess moisture.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to experiment with different cheeses.
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free version.
  • 2 large eggs Substitute with chickpea flour mixed with water for a vegan version.
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions
 

Preparation

  • Preheat the air fryer to 375°F (190°C).
  • In a bowl, combine the riced cauliflower, cheese, breadcrumbs, eggs, green onions, garlic powder, onion powder, and salt and pepper. Mix until well combined.
  • Form the mixture into small fritters or patties.
  • Spray the air fryer basket with cooking spray.
  • Place the fritters in the basket in a single layer; do not overcrowd.

Cooking

  • Air fry for 10-12 minutes, flipping halfway, until golden and crispy.
  • Remove and serve warm.

Notes

Best served hot right out of the air fryer, they pair well with dipping sauces like garlic mayo or ranch dressing. Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the air fryer to regain crispiness. Feel free to add cooked bacon bits or diced bell peppers for variation.
