Instructions
 

Preparation

  • Gather mixed dried fruits and combine them with the orange juice in a bowl. Let them soak for at least 1 hour, preferably overnight.
  • Preheat your air fryer to 320°F (160°C) for 5 minutes.
  • Prepare a 6-inch round cake pan by lining it with parchment paper and lightly greasing it.
  • In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  • Gradually combine the dry mixture with the wet ingredients, mixing just until combined.
  • Stir in the soaked fruits with any leftover juice, and add in the chopped nuts and candied peel, if using.
  • Pour the batter into the prepared cake pan and smooth the top.

Cooking

  • Carefully place the cake pan in the air fryer basket. Air fry at 320°F (160°C) for 35-40 minutes, or until a toothpick comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Serving

  • Once cooled, slice the cake into generous pieces and serve.

Notes

Make sure your butter is softened to room temperature. Be careful not to overmix. Store leftovers in an airtight container at room temperature for up to three days.
