  • 9–10 slices bacon Crispy bacon adds that savory kick that makes this dish addictive!
  • 2 tablespoons oil Olive oil works great here, helping the potatoes crisp up beautifully.
  • 1 tablespoon minced garlic Garlic brings in that aromatic flavor that makes everything better.
  • 1/2 teaspoon salt Basic seasonings that enhance all the flavors.
  • 1/2 teaspoon pepper Basic seasonings that enhance all the flavors.
  • Dried parsley for garnish Just a sprinkle at the end makes it look pretty and adds a touch of freshness.

Preparation

  • Wash and prep the potatoes: Start by giving your russet potatoes a good scrub under running water to remove any dirt.
  • Create a flat base: Slice a thin layer off the bottom of each potato to prevent them from rolling around when slicing.
  • Cutting with care: Place two wooden spoons on either side of a potato to help make Hasselback cuts without slicing all the way through.
  • Brush with oil: Once the potatoes are cut, brush them generously with oil to get a crispier texture.
  • Microwave for a bit: Cook the potatoes in the microwave for about 10 minutes to soften them.
  • Cool down: Let your potatoes cool for a few minutes.
  • Prepare the goodies: Slice your cheddar cheese and bacon into squares to fit within the potato slits.
  • Stuff those potatoes: Carefully stuff a slice of cheese and a piece of bacon into each sliced opening.
  • Season it up: Brush a little more oil on top and sprinkle with garlic, salt, and pepper.

Cooking

  • Air Frying Time: Place your stuffed potatoes in the air fryer basket, set it to 400°F, and cook for 20 to 30 minutes.
  • Garnish and serve: Once done, take them out and sprinkle with dried parsley. Let them cool for a minute before serving.

Notes

For crispier potatoes, consider increasing the cooking time. You can also switch up the flavor with fresh herbs like rosemary or thyme. Store leftovers in an airtight container; they reheat well in the air fryer.
