Ingredients
  

Mashed Potato Mixture

  • 2 cups mashed potatoes Can be leftover or freshly made
  • 1/2 cup shredded cheese Cheddar recommended, but mozzarella or pepper jack can be used
  • 1/4 cup green onions, chopped Adds lovely flavor
  • 1 large egg, beaten Acts as a binder
  • salt and pepper to taste salt and pepper Don’t skip on seasoning

Coating

  • 1/2 cup breadcrumbs Panko recommended for extra crunch
  • oil spray as needed Oil spray for air frying Helps crisp up the outside

Instructions
 

Preparation

  • In a large mixing bowl, combine the mashed potatoes, shredded cheese, green onions, salt, and pepper.
  • Use your hands to create small balls, about the size of a golf ball.
  • In a shallow dish, pour the breadcrumbs and in another bowl, beat the egg.
  • Dip each potato ball into the egg and then roll it in the breadcrumbs until fully coated.
  • Preheat your air fryer to 375°F (190°C).

Cooking

  • Lightly spray the air fryer basket with cooking spray.
  • Arrange the potato balls in a single layer in the basket.
  • Spray the tops of the potato balls with oil.
  • Cook for about 10-12 minutes, shaking the basket halfway through.
  • Once golden brown and crispy, carefully remove them from the fryer.
  • Serve hot with dipping sauces.

Notes

You can freeze these balls before cooking. Store in an airtight container in the refrigerator for up to three days, and reheat in the air fryer.
