Ingredients
  

Muffin Batter

  • 1 cup all-purpose flour
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1/4 cup pizza sauce for topping

Preparation

  • Preheat the air fryer to 350°F (175°C).
  • In a bowl, mix the flour, baking powder, Italian seasoning, and salt.
  • In another bowl, combine the milk and egg; then mix with the dry ingredients.
  • Fold in the shredded mozzarella and pepperoni.
  • Pour the batter into muffin cups or a silicone mold, filling each about 2/3 full.
  • Add a small spoonful of pizza sauce on top of each muffin.

Cooking

  • Place the muffins in the air fryer basket, avoiding overcrowding.
  • Cook for about 10-12 minutes until golden brown and cooked through.
  • Allow to cool slightly before serving.

Notes

Store any leftover pizza muffins in an airtight container in the fridge for up to 3 days. They can also be frozen for a month. Reheat in the air fryer or microwave before serving. Make sure not to overmix the batter; this keeps the muffins light and fluffy. Add toppings like bell peppers, olives, or different cheeses for variations.
