  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons chipotle seasoning Adjust to taste for spice level.
  • 1 cup bell peppers, sliced Use a mix of colors for a vibrant dish.
  • 1 cup zucchini, sliced
  • 1 cup red onion, sliced
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Preparation

  • In a mixing bowl, toss the shrimp with chipotle seasoning, olive oil, salt, and pepper.

Cooking

  • Preheat the air fryer to 400°F (200°C).
  • Add the shrimp and rainbow veggies to the air fryer basket in a single layer.
  • Air fry for 8-10 minutes, shaking the basket halfway through, until the shrimp are cooked through and the veggies are tender.

Serving

  • Serve hot, garnished with fresh herbs. This dish pairs well with rice, quinoa, or a light salad.

Notes

Make sure to not overcrowd the air fryer basket for even cooking. You can add other vegetables like carrots or broccoli for variation.
