  • 2 pieces chicken breasts, diced Use boneless chicken breasts for easy cooking.
  • 1 cup pineapple chunks (fresh or canned) Fresh pineapple enhances the flavor.
  • 1 cup rice (jasmine or basmati) Choose according to preference.
  • 2 cups chicken broth Provides flavor and moisture.
  • 1/4 cup soy sauce Adjust for lower sodium options.
  • 2 tablespoons olive oil For marinating the chicken.
  • 1 clove garlic, minced Adds depth of flavor.
  • 1 teaspoon ginger, grated Fresh ginger is recommended.
  • Salt and pepper to taste
  • Green onions for garnish Chopped for serving.

Instructions
 

Preparation

  • Preheat the air fryer to 350°F (175°C).
  • In a bowl, mix the soy sauce, minced garlic, grated ginger, olive oil, salt, and pepper.
  • Toss the diced chicken in the marinade and let it sit for 15 minutes.

Cooking

  • In the air fryer basket, add the marinated chicken, pineapple chunks, and rice. Pour the chicken broth over the top.
  • Cook in the air fryer for 20-25 minutes, stirring halfway through, until the chicken is cooked and the rice is tender.

Serving

  • Garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 2 months. Reheat thoroughly before serving. Fresh pineapple gives a brighter flavor; you can also add chili flakes or vegetables like bell peppers and broccoli for more nutrition.
