Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 pinch salt

Wet Ingredients

  • 2 eggs At room temperature for best results
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Add-Ins

  • 1/2 cup chopped pistachios Can be substituted with other nuts like walnuts or pecans

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease and line a cake pan.
  • In a mixing bowl, combine the almond flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the eggs, melted butter, and vanilla extract.
  • Slowly add the wet ingredients to the dry ingredients and mix until just combined.
  • Fold in the chopped pistachios.

Baking

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

Serve warm or at room temperature; pairs well with tea or coffee. Can add powdered sugar, whipped cream, or vanilla ice cream.
