  • 2 cups almond flour
  • 1.5 cups peeled and diced apples
  • 3 large eggs can be substituted for flaxseed eggs for a vegan option
  • 1/3 cup maple syrup or honey
  • 1/4 cup melted unsalted butter or coconut oil
  • 1 tsp vanilla extract
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground nutmeg freshly grated for stronger flavor
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a cake pan.
  • In a large bowl, mix the almond flour, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together the eggs, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract.
  • Combine the wet and dry ingredients, then fold in the diced apples.
  • Pour the batter into the prepared cake pan and spread evenly.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool before slicing and serving.

Notes

Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream. You can also dust with powdered sugar or add a drizzle of caramel.
