Preparation

  • Preheat your oven to 350°F (175°C) and grease a cake pan.
  • In a mixing bowl, whisk together the almond flour, baking powder, and salt.
  • In another bowl, beat the eggs and then mix in the maple syrup (or honey), Greek yogurt, coffee, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Baking

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool before serving.

Notes

Serve the cake with a dollop of whipped cream or a light drizzle of chocolate sauce for added sweetness. Store leftover cake in an airtight container at room temperature for up to three days, or refrigerate for up to a week. For longer storage, freeze slices wrapped in plastic wrap and foil for up to three months.
