  • 2 cups almond flour Make sure to measure correctly for best texture.
  • 2 tbsp coconut sugar or granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs Can substitute with flax eggs for vegan option.
  • 3 tbsp unsalted butter, melted Can substitute with plant-based butter for vegan option.
  • 1 tsp vanilla extract

Optional Add-Ins

  • 1/2 cup chocolate chips or dried fruit Adds sweetness and flavor.
  • 1 Zest of 1 lemon or orange

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine almond flour, coconut sugar, baking powder, and salt.
  • In another bowl, whisk together eggs, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  • Fold in any optional add-ins, if using.

Baking

  • Scoop the dough onto the prepared baking sheet and shape into scones.
  • Bake for 15-20 minutes or until golden brown.
  • Allow to cool slightly before serving.

Notes

These scones are best served warm with butter, jam, or cream. They can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
