Main Ingredients

  • 1 cup almond butter Make sure it's smooth for best texture.
  • 1/2 cup honey Adjust sweetness to taste.
  • 2 cups rolled oats Use gluten-free oats for gluten-free cookies.
  • 1/2 cup shredded coconut
  • 1/2 cup chocolate chips Can substitute with dark or white chocolate.
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together almond butter, honey, and vanilla until smooth.
  • Stir in rolled oats, shredded coconut, chocolate chips, and salt until well incorporated.

Baking

  • Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are golden.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for about a week. Can freeze for up to three months, wrapped well.
