Ingredients
  

For the Spread

  • 1/2 cup mayonnaise
  • 3 tablespoons ketchup
  • 2 tablespoons sweet pickle relish
  • 1 1/2 teaspoons white sugar
  • 1 teaspoon distilled white vinegar

For the Grilled Onions

  • 2 tablespoons unsalted butter
  • 1 tablespoon canola oil
  • 4 1/2 cups chopped yellow onion
  • 1 teaspoon kosher salt
  • 4 tablespoons water, divided use as needed for onions

For the Fries

  • 1 28 ounce package frozen shoestring potato fries follow package instructions for cooking
  • 4 slices American cheese

Preparation

  • In a small bowl, whisk together the mayonnaise, ketchup, relish, sugar, and vinegar until well combined. Cover and set aside.
  • Heat the butter and oil in a large skillet over medium heat. Add the chopped onions and kosher salt. Cook, stirring occasionally, until softened and golden brown (about 20 minutes). If the skillet gets dry, add 1 tablespoon of water at a time until the onions are very soft and jammy.
  • Cook the fries according to the package instructions.

Serving

  • Divide the fries evenly among 4 plates. Top each plate with a slice of American cheese, followed by 3 tablespoons of grilled onions, and finish with 3 tablespoons of the spread.

Notes

For extra flavor, try adding some garlic powder to the grilled onions. You can use sweet, yellow, or even red onions for different taste experiences. Make the spread ahead of time and let it chill for better flavor. If you have leftovers, store them in an airtight container in the fridge.
