  • 1 cup Sugar
  • 3 Large eggs Room temperature for better mixing.
  • 1 teaspoon Vanilla extract Add for flavor.
  • 2 tablespoons Melted butter Adds moisture.

Dry Ingredients

  • 2 cups All-purpose flour Can be substituted with gluten-free flour.
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt

Fruits

  • 1 cup Blueberries Fresh or frozen.
  • 1 Apple, peeled and diced Use a tart apple for best flavor.

Optional

  • Powdered sugar for dusting Optional, for serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a round cake pan with butter or non-stick spray.

Mixing

  • In a large mixing bowl, combine Greek yogurt, sugar, eggs, and vanilla extract. Mix until creamy.
  • In another bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing gently until just blended.
  • Fold in the blueberries and diced apple.
  • Pour in melted butter and fold gently into the batter.

Baking

  • Pour the batter into the greased cake pan and spread evenly.
  • Bake in the preheated oven for about 50 minutes, or until a toothpick comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  • Dust with powdered sugar before serving if desired.

Serving

  • Slice into generous pieces and enjoy, optionally serving with whipped cream or vanilla ice cream.

Notes

Allowing the cake to cool completely prevents it from becoming gummy. You can experiment with adding spices like cinnamon to enhance flavors.
