Ingredients
  

Salad Base

  • 2 cups Fresh Spinach Make sure to wash thoroughly.
  • 1 large Apple (any variety you prefer), chopped Sweet varieties like Honeycrisp are recommended.
  • 1 cup Mandarin Oranges, drained Use canned or fresh, peeled.
  • 1/2 cup Pecans, chopped Optional to toast for added flavor.
  • 1/2 cup Dried Cranberries
  • 1 Avocado, sliced Scoop for easier slicing.

Dressing

  • 1/4 cup Balsamic Vinaigrette Dressing Add to taste.

Preparation

  • Wash the fresh spinach thoroughly under cold water.
  • Chop the apple into bite-sized pieces.
  • Drain the mandarin oranges if using canned ones.
  • Toast the pecans in a dry skillet over medium heat for about 5 minutes, stirring constantly.
  • Slice the avocado into thin pieces.

Assembly

  • In a large bowl, combine the spinach, chopped apples, mandarin oranges, and sliced avocado.
  • Add the toasted pecans and dried cranberries.
  • Drizzle the balsamic vinaigrette over the salad.
  • Gently toss the salad until all ingredients are coated.
  • Serve immediately or let sit for a few minutes before serving.

Notes

For added flavor, sprinkle feta cheese on top. Use fresh ingredients for the best taste. You can prepare components ahead of time, but wait to dress the salad until just before serving.
