Ingredients
  

For the crust

For the filling

  • 3 to 4 medium apples, peeled and sliced A mix of Granny Smith and Honeycrisp works well.
  • 1 tablespoon lemon juice Keeps the apples from browning.
  • 1 teaspoon cinnamon Classic complement to apples.
  • 0.25 teaspoon nutmeg Rounds out the spices.
  • 1 tablespoon brown sugar For topping the apples.

For the egg wash

  • 1 egg beaten with a splash of water To achieve a golden-brown crust.

Instructions
 

Prepping the Dough

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine the flour, salt, and granulated sugar.
  • Cut in the cold, diced butter until you achieve a coarse crumb texture.
  • Gradually add ice water, mixing until the dough forms a ball.

Chilling and Rolling

  • Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling and Assembling

  • Toss sliced apples with lemon juice, cinnamon, and nutmeg in a large bowl.
  • Roll out the dough into a 12-inch circle.
  • Transfer the rolled dough onto a parchment-lined baking sheet.
  • Place the apple mixture in the center, leaving a 2-inch border.
  • Fold the edges of the crust over the apples, creating a border.
  • Brush the crust with egg wash and sprinkle brown sugar on the apples.

Baking the Galette

  • Bake for 25 to 30 minutes, or until the crust is golden and the apples are tender.
  • Let cool slightly before serving, optionally with vanilla ice cream.

Notes

Chill your dough for a perfectly flaky texture. Use a variety of apples for enhanced flavor. The egg wash gives the crust a shiny finish.
