Ingredients
  

Dry Ingredients

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground cinnamon

Wet Ingredients

  • 1/2 cup Unsalted butter (softened)
  • 2 large Eggs
  • 1 teaspoon Vanilla extract

Filling Ingredients

  • 1 cup Apples (peeled and diced) Preferably Granny Smith or Honeycrisp for sweetness and tartness.
  • 1/2 cup Chopped walnuts or pecans (optional) You can substitute with almonds or omit entirely.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5 inch loaf pan.
  • In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  • In another bowl, beat the softened butter and sugar until light and fluffy.
  • Add in the eggs and vanilla extract, mixing until well incorporated.
  • Gradually add the dry mixture to the wet ingredients, stirring gently to combine.
  • Fold in the diced apples and nuts (if using).
  • Pour the batter into the prepared loaf pan, smoothing the top.
  • Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For best results, always use room temperature butter and eggs. If the top starts browning too quickly while baking, cover loosely with aluminum foil.
