Ingredients
  

For the Filling

  • 1 can canned or jarred artichoke hearts, drained and chopped
  • 4 oz cream cheese, softened
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons chopped green onions
  • 1 teaspoon garlic powder for extra flavor
  • 1 large beaten egg for binding (optional)
  • 1/2 cup gluten-free breadcrumbs for binding (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the chopped artichoke hearts, cream cheese, mozzarella, Parmesan, green onions, and garlic powder.
  • If desired, add in the beaten egg and gluten-free breadcrumbs to help bind the mixture.
  • Scoop the mixture into mini muffin tins or onto a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for about 15 minutes, or until the tops are lightly browned.
  • Remove from the oven and let them cool for a few minutes before serving.

Notes

These bites can be made ahead of time and refrigerated before baking. Serve with marinara or pesto for dipping. They can also be frozen after baking and reheated later. They are gluten-free if gluten-free breadcrumbs are used.
