  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, frozen, or canned) If using frozen corn, make sure to thaw and drain it.
  • to taste Herbs (e.g., cilantro, parsley) Experiment with different herbs to find your favorite flavor combination.
  • to taste cloves Cracked pepper
  • optional tablespoon Olive oil Optional for added flavor.
  • optional tablespoon Lime or lemon juice Use to prevent avocado from browning.

Preparation

  • In a large bowl, combine the diced avocado, halved cherry tomatoes, and corn kernels.
  • Toss gently to mix.
  • Add chopped herbs and cracked pepper.
  • Drizzle with olive oil and lime or lemon juice if desired.
  • Toss again gently and serve immediately.

Notes

Serve chilled or at room temperature. Pairs well with grilled chicken or fish. Enjoy on its own, with tortilla chips, or as a side at BBQs and picnics. Leftovers should be stored in an airtight container in the fridge and are best eaten within 1-2 days to avoid browning of the avocado.
