Ingredients
  

Pasta Base

  • 3 cups cooked bow-tie pasta Feel free to use any pasta you have on hand.

Salad Ingredients

  • 1 large avocado, diced Choose ripe avocados for the best flavor.
  • 1 cup cherry tomatoes, halved Adds sweetness and color to the dish.
  • 1/2 cup sweet corn (fresh or canned) Adds a lovely crunch.
  • 1/4 cup red onion, thinly sliced Brightens the salad with color and taste.
  • 2 tablespoons fresh parsley, chopped Adds bright flavor and vibrant color.

Dressing

  • 1 unit lemon juice Adds a zesty touch.
  • 2 tablespoons olive oil Enhances flavor and richness.
  • to taste salt and pepper Season to your preference.

Instructions
 

Preparation

  • Cook the bow-tie pasta according to package instructions until al dente. Drain and set aside.
  • Wash and chop the vegetables as needed.

Mixing

  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
  • In a large mixing bowl, combine the cooked pasta, diced avocado, halved cherry tomatoes, sweet corn, thinly sliced red onion, and chopped parsley.
  • Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.

Serving

  • Transfer the salad to a serving bowl and enjoy immediately, or chill in the refrigerator for 15 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 1-2 days. Keep in mind that the avocado may brown, so adding extra lemon juice can help. To enjoy later, give the salad a good stir.
