Preparation

  • In a small bowl, whisk together the lemon juice, honey, salt, and pepper to create the vinaigrette.
  • Halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion. Place the veggies in a large salad bowl.
  • Cut the ripe avocados in half, remove the pit, scoop the flesh out with a spoon, and slice it into bite-sized pieces.
  • Gently toss the cherry tomatoes, cucumber, and red onion with the vinaigrette in the salad bowl.
  • Carefully fold the avocado pieces into the salad.
  • Drizzle any remaining vinaigrette over the salad before serving.
  • Garnish with fresh herbs if desired.

Notes

Serve fresh for the best taste. This salad can be a side dish or a light meal. If you have leftovers, store in an airtight container and add a bit more lemon juice before serving again.
