Ingredients
  

Vegetables

  • 2 pieces cucumbers, sliced
  • 3 pieces tomatoes, cut into wedges
  • 1 small red bell pepper, sliced
  • 1/2 piece red onion, sliced thin

Marinade

  • 1/4 cup red wine vinegar
  • 3 tbsp avocado oil or olive oil
  • 1 tsp garlic powder
  • to taste Salt & pepper
  • 1 squeeze fresh lemon juice

Instructions
 

Preparation

  • In a large bowl, mix all the sliced vegetables together.
  • In a separate bowl, whisk the red wine vinegar, avocado oil (or olive oil), garlic powder, salt, pepper, and lemon juice until well combined.
  • Pour the mixture over the vegetables and toss everything together until the veggies are fully coated.
  • Let the salad marinate in the refrigerator for at least 45 minutes to allow the flavors to blend.

Serving

  • Serve cold, either alongside grilled meats or as a light vegan dish.

Notes

For extra crunch, consider adding vegetables like carrots or celery. Feel free to adjust the seasonings to your preference. A dash of red pepper flakes can add a delightful kick! If you like herbs, try mixing in some fresh basil or parsley for added flavor. Leftovers can be stored in an airtight container in the refrigerator for about 2-3 days.
