  • 2 large large cucumbers Fresh cucumbers for best taste and crunch.

Filling

  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup ranch dressing Make sure it's gluten-free if needed.
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced green onions Feel free to add more for extra flavor.
  • to taste Salt and pepper Adjust seasoning based on preference.

Preparation

  • Cut cucumbers in half lengthwise and scoop out the seeds with a spoon.
  • In a bowl, combine shredded chicken, crumbled bacon, ranch dressing, cheddar cheese, and green onions.
  • Mix well and season with salt and pepper to taste.
  • Spoon the chicken mixture into the cucumber boats.

Notes

These cucumber boats are best served fresh, but can be stored in the fridge for up to 3 days. Keep the filling and cucumbers separate until ready to serve.
