For the Cucumber Boats

  • 2 large cucumbers Fresh for the best crunch

For the Chicken Salad

  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup ranch dressing Adjust to taste
  • 1/4 cup chopped green onions Add more for garnish if desired
  • to taste Salt and pepper

Preparation

  • Cut the cucumbers in half lengthwise and scoop out the seeds to create boats.
  • In a bowl, combine the shredded chicken, crumbled bacon, ranch dressing, and chopped green onions. Season with salt and pepper.
  • Spoon the chicken salad mixture into the cucumber boats.
  • Serve immediately and enjoy!

Notes
