Main ingredients

  • 4 medium Cucumbers Smaller cucumbers can be used for bite-sized boats.
  • 1 can Canned chicken Alternatively, can use shredded rotisserie chicken.
  • 4 slices Bacon Cooked and crumbled.
  • 1 cup Cheese Use cheddar or pepper jack for extra flavor.
  • 1/2 cup Ranch dressing Adjust according to taste.

Preparation

  • Cut cucumbers in half lengthwise and scoop out the insides.
  • In a bowl, mix canned chicken, cooked and crumbled bacon, cheese, and ranch dressing until well combined.
  • Fill the cucumber boats with the chicken salad mixture.
  • Serve immediately and enjoy!

Notes

Store the filling separately from the cucumber boats in an airtight container in the fridge for up to 3 days. Fill fresh cucumber boats with the mixture just before serving.
