  • 1/3 cup flour of choice Can be substituted with gluten-free flour for gluten-free option.
  • 1/2 tsp garlic powder Add more herbs or spices to taste.
  • 1/2 tsp onion powder
  • to taste black pepper For a bit of a kick, consider adding red pepper flakes.

Preparation

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • In three separate bowls, place the beaten eggs in one bowl, the grated parmesan cheese in the second bowl, and whisk together the flour with the garlic powder, onion powder, and black pepper in the third bowl.
  • Take about six slices of zucchini and dredge them first in the eggs, allowing any excess to drip off.
  • Next, coat the zucchini in the parmesan cheese.
  • Finally, lightly dip only the tops and bottoms into the flour mixture.

Baking

  • Arrange the coated zucchini stacks on the prepared baking sheet.
  • Bake for 35 to 40 minutes, or until they are golden brown and crispy.

Notes

Baked Cheesy Zucchini Stacks are best served warm with your favorite dipping sauce, such as marinara or ranch. If you have leftovers, store them in an airtight container in the refrigerator for up to three days. Reheat in the oven or air fryer to restore crispiness.
