Ingredients
  

Zucchini and Cheese Mixture

  • 2 medium zucchinis Sliced into 1/4 inch thick rounds
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste pepper
  • for drizzling Olive oil

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the zucchinis into 1/4 inch thick rounds.
  • Arrange zucchini slices on a baking sheet.
  • In a bowl, mix mozzarella cheese, Parmesan cheese, breadcrumbs, Italian seasoning, salt, and pepper.
  • Top each zucchini slice with the cheese mixture.
  • Drizzle with olive oil.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  • Serve warm and enjoy!

Notes

For extra flavor, sprinkle some herbs on top before serving. You can store leftovers in an airtight container in the fridge for up to 3 days. Reheat at 350°F (175°C) for about 10 minutes.
