  • 3 tablespoons olive oil Adds richness.

  • 1 piece lemon, juiced and zested Essential for flavor.
  • 1 teaspoon paprika Adds a nice color and mild heat.
  • 1/2 teaspoon dried thyme Fresh herbs can be used if available.
  • Salt and pepper to taste For seasoning.

For Serving

  • Fresh parsley, chopped Fresh parsley, chopped Use for garnish.
  • Lemon wedges Lemon wedges To serve with the dish.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Line a baking dish with parchment paper or lightly grease it.
  • In a small bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, paprika, thyme, salt, and pepper.
  • Place cod fillets in the prepared baking dish without overlapping.
  • Drizzle the garlic lemon mixture over the cod fillets.

Cooking

  • Bake the cod fillets in the preheated oven for 12-15 minutes or until opaque and flakes easily with a fork.
  • Garnish with fresh parsley and serve with lemon wedges.

Notes

For added flavor, you can prepare the garlic lemon mixture a few hours in advance. If you have leftovers, store them in an airtight container in the fridge for up to three days.
