Ingredients
  

Filling

  • 2 cups cooked shredded chicken You can use rotisserie chicken for convenience.
  • 1 cup cream cheese, softened Make sure to soften it for easier mixing.
  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to experiment with different varieties.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • to taste Salt and pepper

Wrapping

  • 12 small tortillas Use corn or flour tortillas based on preference.
  • as needed Cooking spray For lightly spraying the taquitos.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine the shredded chicken, cream cheese, shredded cheese, garlic powder, onion powder, cumin, salt, and pepper.
  • Lay a tortilla flat and spoon some of the chicken mixture onto the center. Roll it up tightly and place it seam side down on a baking sheet. Repeat with all tortillas.

Baking

  • Spray the taquitos lightly with cooking spray.
  • Bake for 15-20 minutes or until they are golden and crispy.

Serving

  • Serve these delicious taquitos warm, straight from the oven. They pair perfectly with salsa, guacamole, or sour cream.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for about 3-4 days. For longer storage, freeze the taquitos before baking. Add a few extra minutes to the baking time if baking from frozen.
