Baked Parmesan Tomatoes

Ingredients
  

For the Tomatoes

  • 4 large large ripe tomatoes, sliced thick Choose ripe tomatoes for the best flavor.
  • 1 cup shredded mozzarella Use freshly grated cheese for richer flavor.
  • 1/2 cup freshly grated parmesan
  • 1/4 cup seasoned breadcrumbs
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh parsley (plus extra for garnish)
  • 1/2 tsp dried oregano Feel free to adjust seasoning.
  • Salt & black pepper, to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Place the tomato slices in a greased baking dish. Season them with salt and pepper to taste.
  • Sprinkle the minced garlic over the tomatoes, then layer the mozzarella and parmesan cheese on top of each slice.
  • In a small bowl, mix together the breadcrumbs, olive oil, oregano, and parsley. Sprinkle this mixture on top of the cheese.

Cooking

  • Roast the tomatoes in the oven for 15–18 minutes, or until the cheese is melted and bubbly. If you want a golden crust, broil for an additional 1–2 minutes.

Serving

  • Garnish with extra parsley and serve warm.

Notes

If you have leftovers, allow them to cool completely before storing. Place them in an airtight container in the refrigerator for about 3 days. To reheat, bake until warmed through. Adjust seasoning according to your taste; add red pepper flakes for a spicy kick!
