Baked Parmesan Tomatoes

Ingredients
  

Vegetables

  • 4 large large ripe tomatoes, sliced thick Use the ripest tomatoes for best flavor.

Cheeses

  • 1 cup shredded mozzarella
  • 1/2 cup freshly grated parmesan

Breadcrumb Mixture

  • 1/4 cup seasoned breadcrumbs
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1 tbsp chopped fresh parsley Plus extra for garnish.

Seasoning

  • 2 cloves garlic, minced
  • to taste salt & black pepper

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Place the tomato slices in a greased baking dish. Season with salt and pepper.

Topping

  • Sprinkle minced garlic over the tomatoes, then layer the mozzarella and parmesan cheese on top of each slice.
  • In a bowl, mix the breadcrumbs, olive oil, oregano, and parsley. Sprinkle this mixture over the cheese on the tomatoes.

Baking

  • Roast in the oven for 15–18 minutes until the cheese is melted and bubbly.
  • Broil for 1–2 minutes for a golden crust on top.

Serving

  • Garnish with extra parsley and serve warm.

Notes

Baked Parmesan Tomatoes can be served hot as a side dish with grilled meats or fish. They also make a great appetizer or light lunch paired with a fresh garden salad. If you have leftovers, let them cool completely before storing in an airtight container in the refrigerator for about 3 days.
