Baked Salmon with Lemon and Dill

Ingredients
  

Main Ingredients

  • 2 pounds salmon Fresh salmon fillet
  • 2 medium lemons For juicing and slicing
  • 2 tablespoons olive oil For drizzling over the salmon
  • 3 cloves garlic (minced) Adds flavor
  • 1 teaspoon kosher salt For seasoning
  • 3 tablespoons fresh chopped dill (divided) Use fresh for best flavor
  • fresh ground pepper To taste

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a sheet pan with foil and lightly coat it with cooking spray.
  • Place the salmon on the prepared sheet pan.
  • Drizzle the olive oil over the salmon and rub it to coat evenly.
  • Spread the minced garlic on top of the salmon evenly.
  • Sprinkle the salmon with kosher salt, fresh ground pepper, and half of the chopped dill.
  • Slice the lemons thinly and place the slices on top of the salmon.
  • Fold the foil up around the salmon to create a pouch, sealing it tightly.

Cooking

  • Bake the salmon in the oven for about 15 minutes.
  • After 15 minutes, carefully open the pouch and fold the foil back over the edges of the sheet pan.
  • Move the lemon slices off of the salmon and place them around the sides.
  • Switch your oven setting to broil and return the salmon to the oven.
  • Broil for about 3 minutes, until the top starts to brown and the edges become crispy.
  • Remove from the oven and top with the remaining fresh dill. Serve immediately.

Notes

Best served fresh. Enjoy with steamed vegetables, rice, or a fresh salad. For extra flavor, squeeze more lemon juice before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
