Ingredients
  

For the Stuffing

  • 1 lb ground beef Lean ground beef can be substituted with turkey or chicken.
  • 1 cup cooked white rice Helps bind everything together.
  • 1 cup corn Can be canned or frozen.
  • 1 can fire-roasted tomatoes (14.5 oz) Drained for the filling.
  • 1 cup black beans Drained and rinsed.
  • 2 cloves garlic, minced Essential for flavor.
  • 1 onion, chopped Adds sweetness to the filling.

For the Peppers

  • 4 large poblano peppers Stars of the dish, mild heat and smoky flavor.

For Toppings

  • 1 cup Monterey Jack cheese, shredded Melts wonderfully.
  • 1 cup cheddar cheese, shredded Provides rich flavor.
  • to taste salt and pepper For seasoning.
  • 1 tbsp olive oil Used for sautéing.

Instructions
 

Preparation

  • Preheat the oven to 375°F.
  • Cut the tops off the poblano peppers and remove the seeds.
  • In a sauté pan, heat about a tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent.
  • Add the minced garlic and ground beef to the pan. Cook until the beef is browned, breaking it apart as it cooks.
  • Stir in the cooked rice, corn, fire-roasted tomatoes, and black beans. Season with salt and pepper.

Assembly

  • Stuff each poblano pepper with the beef mixture, packing it in well.
  • Place the stuffed peppers in a baking dish and scatter any leftover filling around them.
  • Sprinkle Monterey Jack and cheddar cheese generously on top of each pepper.

Cooking

  • Cover the dish with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Remove from oven and let cool for a few minutes before serving.

Notes

For extra flavor, consider adding spices like cumin or smoked paprika to the filling. If you want a milder version, substitute poblano peppers with sweet bell peppers.
