For the zucchini fries

  • 2 medium zucchinis Slice into fry shapes
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese Can substitute with other cheese
  • 2 large eggs Whisked for coating
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Olive oil spray For spraying fries

Preparation

  • Preheat the oven to 425°F (220°C).
  • Slice the zucchinis into fry shapes.

Coating

  • In one bowl, whisk the eggs.
  • In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Dip each zucchini fry in the egg, then coat with the breadcrumb mixture.

Baking

  • Place the fries on a baking sheet lined with parchment paper and spray lightly with olive oil.
  • Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  • Serve immediately and enjoy!
