Ingredients
  

Main Ingredients

  • 2 medium zucchinis Cut into fry-like sticks
  • 1 cup breadcrumbs (panko or regular) Panko breadcrumbs provide extra crunch
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs Beaten

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • as needed Olive oil spray To achieve a crispy texture

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Slice the zucchinis into fry-like sticks.
  • In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  • In another bowl, beat the eggs.
  • Dip each zucchini stick into the egg, then coat with the breadcrumb mixture.
  • Place the coated zucchini fries on a baking sheet lined with parchment paper.
  • Spray lightly with olive oil spray.

Cooking

  • Bake for 20-25 minutes until golden brown and crispy, turning halfway through.

Notes

Serve Baked Zucchini Fries on their own or with marinara sauce, ranch dressing, or spicy aioli. Make sure to cut the zucchini into uniform sticks for even cooking and feel free to add other spices for added flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
