  • 2 medium zucchinis Choose firm zucchinis for better texture.
  • 1 cup breadcrumbs (panko or regular) For extra crunch, use panko breadcrumbs.
  • 1/2 cup grated Parmesan cheese You can also add grated cheese like mozzarella or cheddar for a different flavor.
  • 1 teaspoon garlic powder Feel free to add spices like paprika or Italian seasoning for more flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs Ensure zucchini sticks are dry before dipping for better coating.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Slice the zucchinis into fry-shaped pieces.
  • In a bowl, beat the eggs.
  • In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  • Dip each zucchini stick into the eggs, then coat it with the breadcrumb mixture.
  • Place the coated zucchini fries on a baking sheet lined with parchment paper.

Baking

  • Bake for 20-25 minutes or until they are golden brown and crispy.

Serving

  • Serve hot with your favorite dipping sauce such as marinara, ranch, or garlic aioli.

Notes

To store leftovers, let them cool completely, then place in an airtight container and refrigerate for up to 3 days. To reheat, bake in the oven at 375°F (190°C) for about 10 minutes.
