  • 2 cups Ripe tomatoes, diced Adds a touch of sweetness.
  • 1 cup Asparagus, chopped Brings crunch and nutrition.
  • 1 medium Zucchini, sliced Mild flavor complements the dish.
  • 1/2 cup Balsamic vinegar Adds deep, rich flavor.
  • 1 cup Provolone cheese, shredded Melts beautifully over the chicken.
  • 1 cup Mozzarella cheese, shredded Contributes gooeyness to the dish.
  • 1 tablespoon Olive oil For sautéing.
  • to taste Salt and pepper Essential for seasoning.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large skillet, heat about a tablespoon of olive oil over medium heat.
  • Season the chicken breasts with salt and pepper on both sides.
  • Add the chicken breasts to the skillet and cook until browned, about 5 minutes per side.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, toss in the diced tomatoes, chopped asparagus, and sliced zucchini. Sauté for about 5 minutes.
  • Pour the balsamic vinegar over the vegetables and return the chicken to the skillet.
  • Sprinkle both the provolone and mozzarella cheese over the chicken and veggies.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  • Remove from the oven and let rest for a few minutes before serving.

Notes

Add fresh herbs like rosemary or thyme for enhanced flavor. This dish is perfect for family gatherings and can be paired with garlic mashed potatoes or a fresh salad.
