Preparation

  • Preheat the oven to 400°F (200°C).
  • Rinse and chop the tomatoes into chunks, trim the asparagus, and slice the zucchini into half-moons.

Cooking

  • In a baking dish, lay the boneless chicken breasts evenly.
  • Scatter the chopped tomatoes, asparagus, and zucchini over the chicken.
  • Drizzle the balsamic reduction glaze over everything.
  • Top with slices of provolone and mozzarella cheese.
  • Bake for 25-30 minutes, checking for doneness at the 30-minute mark.
  • Ensure the chicken is no longer pink in the center and juices run clear (aim for an internal temperature of 165°F/74°C).
  • Let it rest for a few minutes before serving.

Notes

For a crispy cheese finish, consider broiling for the last 2-3 minutes of cooking. Marinating the chicken in balsamic glaze enhances flavor. For heat, sprinkle red pepper flakes before baking.
