  • 1.5 cups fine oat flakes Ensure to use gluten-free oat flakes if needed.
  • 0.5 cup coconut oil Can be substituted with almond oil or butter.
  • 1 cup sugar Adjust based on the sweetness of bananas.
  • 3 pieces ripe bananas Use very ripe bananas for best flavor.
  • 3 pieces red apples Grated for incorporation into the batter.

Dry Ingredients

  • 0.5 cup raisins
  • 0.5 cup walnuts Chop coarsely for texture.
  • 1 tablespoon baking powder
  • 1 tablespoon ground cinnamon You can add nutmeg or ginger for variation.

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  • In a mixing bowl, whisk together eggs and sugar until pale and fluffy.
  • Mix in coconut oil, mashed bananas, and grated apples.
  • In another bowl, combine oat flakes, baking powder, ground cinnamon, and walnuts.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in raisins.

Baking

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool before slicing and serving.

Notes

Serve warm or at room temperature, plain or with ice cream, whipped cream, or powdered sugar. Store in an airtight container at room temperature for up to three days or refrigerate for a week. Freeze tightly wrapped for up to three months.
