Ingredients
  

Wet Ingredients

Dry Ingredients

  • 1 1/2 cups 1 1/2 cups of fine oat flakes
  • 1 cup 1 cup of sugar Can be reduced according to taste.
  • 1/2 cup 1/2 cup of raisins Substitute with dried cranberries for variation.
  • 1/2 cup 1/2 cup of walnuts Consider toasting for extra crunch before adding.
  • 1 tablespoon 1 tablespoon of baking powder
  • 1 tablespoon 1 tablespoon of ground cinnamon Add a splash of vanilla extract for extra flavor.

Fruits

  • 3 red apples 3 red apples Feel free to use sweet apples like Fuji or Honeycrisp.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a cake pan.
  • In a mixing bowl, mash the ripe bananas.
  • Beat the eggs in a separate bowl and then mix them with the mashed bananas and coconut oil.
  • In another bowl, combine the oat flakes, sugar, baking powder, ground cinnamon, raisins, and chopped walnuts.
  • Gradually combine the dry ingredients with the wet ingredients until well mixed.
  • Fold in the diced apples.
  • Pour the batter into the prepared cake pan.

Baking

  • Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  • Let it cool before serving.

Notes

This cake is delicious warm or at room temperature. Serve it plain or with a dollop of whipped cream. Store leftovers in an airtight container at room temperature for up to three days or refrigerate for up to a week. For longer storage, freeze slices in a freezer-safe bag for up to three months.
