Ingredients
  

Pudding Base

  • 4 pieces Ripe Bananas Choose freckled bananas for maximum sweetness.
  • 2 cups Milk Use whole milk for creaminess.
  • 1/2 cup Sugar Adjust to taste.
  • 1/4 cup Cornstarch Helps thicken the pudding.
  • 1/4 teaspoon Salt Enhances flavor.
  • 3 pieces Large Egg Yolks Adds richness.
  • 1 teaspoon Vanilla Extract Pure vanilla extract preferred.

Meringue

  • 1 cup Heavy Cream For meringue preparation.
  • 1/4 cup Sugar (for meringue) Gradually added to egg whites.
  • 2 pieces Egg Whites Must be at room temperature.

Layering

  • As needed pieces Vanilla Wafers For layering with pudding and bananas.

Instructions
 

Preparation

  • In a medium saucepan, combine milk, sugar, cornstarch, and salt. Place over medium heat and stir until thickened.
  • In a separate bowl, whisk the egg yolks until smooth.
  • Temper the egg yolks by adding a small amount of the hot milk mixture. Then stir the yolk mixture back into the saucepan.
  • Cook for a few more minutes then remove from heat and stir in the vanilla.
  • Allow the pudding to cool slightly.

Layering

  • In a casserole dish, layer vanilla wafers on the bottom.
  • Slice bananas and layer them over the wafers.
  • Pour half of the pudding over the bananas and wafers.
  • Repeat with another layer of wafers, bananas, and the remaining pudding.

Meringue

  • In a clean bowl, whisk the egg whites to form soft peaks.
  • Gradually add the sugar and whisk until stiff peaks form.
  • Spread the meringue over the pudding, sealing the edges.

Baking

  • Preheat the oven to 350°F. Bake for 10-15 minutes until golden brown.
  • Let cool before serving.

Serving

  • Scoop out a portion and enjoy, ideally chilled!

Notes

Allow the pudding to chill in the fridge for a couple of hours to enhance flavors. Serve with whipped cream or berries for added delight.
