Ingredients
  

Chicken Preparation

  • 1 lb Chicken breast Cut into bite-sized pieces
  • 1 cup Corn starch
  • 2 Eggs, beaten
  • 1 cup Panko bread crumbs
  • Oil for frying As needed, for frying

Bang Bang Sauce

  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet chili sauce
  • 1 tsp Sriracha (optional) For added spice

Garnishes

  • Green onions For garnish, chopped

Preparation of Sauce

  • In a mixing bowl, combine mayonnaise, sweet chili sauce, and Sriracha if desired. Mix to combine.

Prepare the Chicken

  • Cut the chicken breast into bite-sized pieces.

Coating the Chicken

  • Set out three bowls: one with corn starch, one with beaten eggs, and one with panko bread crumbs.
  • Coat each chicken piece in corn starch, dip it in the beaten eggs, and then roll it in panko bread crumbs.

Frying the Chicken

  • Heat oil in a deep pan over medium heat.
  • Once the oil is hot, gently place the breaded chicken into the oil, frying in batches for 5-7 minutes until golden brown.
  • Remove cooked chicken and drain on paper towels.

Tossing with Sauce

  • In a large mixing bowl, combine the crispy chicken with the prepared Bang Bang sauce and toss until well coated.

Garnishing and Serving

  • Chop green onions and sprinkle over the chicken.
  • Serve immediately and enjoy!

Notes

For extra crunch, let the coated chicken sit for 10 minutes before frying. You can also marinate the chicken in soy sauce for 30 minutes to enhance flavor. Serving suggestions include fresh salad or steamed rice.
