Ingredients
  

Main ingredients

  • 1 lb boneless chicken thighs or breasts
  • Salt & pepper to taste Salt & pepper
  • 2 cups cooked rice Use leftover rice for better texture and flavor
  • 1 cup peas
  • 1 cup carrots, diced
  • 2 eggs beaten eggs
  • 1/4 cup Bang Bang sauce Adjust according to spice preference
  • 2 tablespoons vegetable oil
  • to taste Green onions, for garnish

Instructions
 

Cooking the Chicken

  • Season the chicken with salt and pepper.
  • Cook it in a skillet over medium heat until it is golden and cooked through, about 5-7 minutes.
  • Remove the chicken from the skillet and chop it into pieces.

Cooking the Eggs and Vegetables

  • In the same skillet, add vegetable oil.
  • Scramble the eggs in the oil and then set them aside.
  • Add the peas and diced carrots to the skillet, cooking until they are just tender.

Combining Ingredients

  • Stir in the cooked rice and mix everything together well.
  • Add the chopped chicken and Bang Bang sauce, combining all the ingredients.
  • Top the fried rice with the scrambled eggs and garnish with chopped green onions.
  • Serve hot!

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 2 months. When ready to eat, reheat in a skillet or microwave until warmed through. Consider adding other vegetables for extra nutrition.
