Bang Bang Chicken Fried Rice

Ingredients
  

Main Ingredients

  • 1 lb boneless chicken thighs or breasts
  • Salt & pepper to taste Salt & pepper
  • 1 tbsp cornstarch (optional for crispiness)
  • 1 tbsp oil (for pan-frying)
  • 1/4 cup mayo
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey or sugar
  • 1 tsp rice vinegar
  • 3 cups cold cooked rice
  • 2 eggs beaten
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 green onions sliced (optional)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp oil (for cooking)

Instructions
 

Cooking Chicken

  • Season the chicken with salt and pepper, and coat it lightly with cornstarch if desired. Heat oil in a pan over medium-high heat and sear the chicken until it’s golden and cooked through. Brush it with the Bang Bang sauce and set it aside.

Scrambling Eggs

  • In the same skillet, pour in the beaten eggs and scramble them until fully cooked. Remove and set aside.

Sautéing Vegetables

  • In the same skillet, add peas and carrots, cooking them until tender.

Frying Rice

  • Add the cold cooked rice to the skillet along with the soy sauce and sesame oil. Stir-fry everything for about 3-4 minutes, until heated through. Mix in the scrambled eggs and sautéed veggies.

Serving

  • Slice the cooked chicken and place it on top of the rice. Drizzle with extra Bang Bang sauce and garnish with green onions if desired.

Notes

For the best texture, use day-old rice. Adjust the spiciness by modifying the amount of sriracha. You can make it vegetarian using tofu or other vegetables of choice.
