  • 1.5 lbs boneless chicken breasts, cubed
  • 1 tbsp vegetable oil For cooking
  • 2 cups cooked rice Best to use cold, day-old rice
  • 3 pieces eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn) Feel free to add extra vegetables
  • 1/4 cup Bang Bang sauce Adjust amount for spice preference
  • to taste Salt and pepper
  • for garnish Green onions Optional, for serving

Instructions
 

Preparation

  • In a large skillet, heat vegetable oil over medium heat.
  • Add cubed chicken and cook until golden brown and cooked through.
  • Remove chicken and set aside.
  • In the same skillet, add mixed vegetables and sauté for a few minutes.
  • Push veggies to one side and pour beaten eggs onto the other side, scrambling them.
  • Once eggs are cooked, add the cooked rice to the skillet.
  • Stir in the Bang Bang sauce and mix well.
  • Fold in the cooked chicken and mix everything together.
  • Season with salt and pepper to taste.
  • Garnish with green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month. Microwave or stir-fry to reheat. Make it vegetarian by substituting chicken with tofu and using a veggie-friendly sauce.
