  • 1.5 lbs boneless chicken breasts (cubed)
  • 1 tbsp vegetable oil For cooking
  • 2 cups cooked rice Day-old rice works best
  • 2 pcs eggs For scrambling
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Feel free to add other veggies
  • 0.25 cups Bang Bang sauce Adjust to taste
  • Salt to taste
  • Pepper to taste
  • Green onions for garnish Chopped

Instructions
 

Cooking

  • Heat the vegetable oil in a pan over medium heat.
  • Add the cubed chicken and cook until golden brown and cooked through.
  • In the same pan, push the chicken to the side and scramble the eggs until fully cooked.
  • Add the mixed vegetables and cooked rice to the pan. Stir to combine.
  • Pour in the Bang Bang sauce and mix well.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

Use leftover rice for the best texture. Adjust the amount of Bang Bang sauce according to your taste. You can use shrimp or tofu instead of chicken or quinoa instead of rice for variations.
