Main Ingredients

  • 1 1/2 lbs boneless chicken breasts (cubed)
  • 1 tbsp vegetable oil
  • 2 cups cooked rice Day-old rice is preferred for better texture.
  • 2 pcs eggs Scrambled in the pan.
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Feel free to substitute with your favorite vegetables.
  • 1/4 cup Bang Bang sauce Adjust the quantity to taste; for more spice, add more sauce.
  • Salt To taste.
  • Pepper To taste.
  • Green onions For garnish.

Cooking

  • Heat the vegetable oil in a pan over medium heat.
  • Add the cubed chicken and cook until golden brown and cooked through.
  • In the same pan, push the chicken to the side and scramble the eggs until fully cooked.
  • Add the mixed vegetables and cooked rice to the pan. Stir to combine.
  • Pour in the Bang Bang sauce and mix well.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to a month and thaw before reheating.
